Mix batter together. Place a 7-8inch cast iron on stove at medium high heat. Add vegan butter or coconut oil to pan. Once hot, pour in batter, tilt pan to get all the edges. Reduce heat to medium. Cover with a lid and let it cook for 4-5 minutes (depending on how thick your pancake is). Commit to flipping and cook for a few minutes on the other side until golden brown. Serve with cooked apples and blueberries if desired.
